Licorice root is one of the most widely used herbs worldwide and is the single most used herb in Traditional Chinese Medicine today. In a recent survey of Western medical herbalists, licorice ranked as the 10th most important herb used in clinical practice. An astonishing number of Chinese herbal formulas (over 5,000) use licorice to sweeten teas and to "harmonize" contrasting herbs.

Because licorice root is a tough, woody material (rather than a delicate leaf or flower), it cannot simply be steeped in a mug. It requires a decoction—simmering the root directly in boiling water—to extract its dense therapeutic properties and intense sweetness. 

The Decoction Method

• Ratio: 1 to 1.5 teaspoons of dried, cut-and-sifted licorice root per 8 oz of water.

• The Simmer: Place the cold water and the licorice root into a small saucepan. Bring the water to a rolling boil, then immediately turn the heat down to low.

• Time: Cover the pot with a tight-fitting lid and let it simmer softly on low heat for 10 to 15 minutes.

• Finish: Remove from the heat and let it sit, still covered, for an additional 5 minutes to allow the volatile compounds to fully settle into the brew. Strain into your mug.
