Oolong Teas are indeed extraordinary because they span an oxidation range of 20-80%, where some are closer to green teas, and others are more similar to black teas. Caffeine levels vary accordingly, where greener oolongs will have less caffeine content and darker oolongs will have higher caffeine content. Oolong teas, because they have higher oxidation levels than green tea, will also have lower catechin levels, although catechins are still present.
However, although catechins decrease with oxidation, theaflavin and thearubigin levels increase. These polyphenols help in defending the body against stroke, dementia, heart disease and cancer. In addition to this, oolong teas have long been believed to aid in digestion, so enjoy a cup with or after your next meal.

Tea brewing can be a delightful and relaxing experience. Here’s a step-by-step guide to get you started:
- **Tea Kettle**: For boiling water
- **Teapot or Infuser**: For steeping the tea
- **Tea Strainer**: Optional, for loose leaf tea
3. Heat the Water
- For **black tea**: Boil water to 200-212°F (93-100°C)
- For **green tea**: Heat water to 160-180°F (71-82°C)
- For **white tea**: Heat water to 170-185°F (77-85°C)
- For **herbal tea**: Boil water to 200-212°F (93-100°C)
4. Measure Your Tea
- **Loose leaf tea**: Use about 1 teaspoon per 8-ounce cup
- **Tea bags**: One bag per 8-ounce cup
5. Steep the Tea
- **Black tea**: 3-5 minutes
- **Green tea**: 2-3 minutes
- **White tea**: 4-5 minutes
- **Herbal tea**: 5-7 minutes
6. Remove the Tea
- Remove the tea leaves or tea bag to prevent oversteeping.
7. Enjoy!
- Add any desired milk, sweetener, or lemon. Sip and enjoy your perfect cup of tea.
